This recipe for iced coffee absolute heaven in a glass!! I prefer the Vietnamese version (at the end of the post) that uses half-and-half and sweetened condensed milk. I'm sure it has about 500 calories per sip, but it's so worth it!

These muffins, with a little tweaking, turned out to be very tasty. I substituted applesauce for the oil, added a little more honey and 1/8 cup of sugar. I am looking forward to my breakfast in the morning :0)
